Grown on our organically-farmed estate vineyard, we created this sparkling rosé from an early harvest of our Dijon-clone Pinot Noirs. We barrel fermented the base wine in neutral French oak cooperage, aged sur lie in stainless for 10 months, and then the cuvée rested "en tirage" for 27 months before being disgorged to share with the world. Owing to its mountain heritage and biodynamic influences, this wine possesses a vibrant acidity that will allow it to age gracefully. The lively palate is marked by notes of candied apple, ripe alpine strawberry and fresh raspberry. Owing to its long term aging, this wine possesses a soft mousse and elegant bead.
